For the Chicken Filling
- 1 pound halal boneless chicken breast, cut into small cubes
- 1 ripe mango, diced (or 1 cup frozen mango chunks, thawed)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon vegetable oil
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Juice of half a lime
- Fresh cilantro, chopped
For the Roti Pockets
- 6-8 store-bought roti or flatbreads
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup plain yogurt or raita
- Optional: sliced cucumber, pickled onions, hot sauce
For the Quick Mango Sauce
- ½ cup diced mango
- 2 tablespoons plain yogurt
- 1 tablespoon lime juice
- 1 teaspoon honey
- Pinch of salt
- Fresh mint leaves
